Czech Saz is the world's noble hop, it comes from the Czech growing region of the same name. This is an outstanding example of old World hop, with a very long history of cultivation, and it is famous for its Pilsnerl beer.
Saz hops are very low in formic acid, have a clean bitter taste, and have aromas of spices and wood, such as dragon wormwood, lavender, cedar, and sometimes bacon and earth.
Saz is used in almost all European beers, such as Pilsen, Belgian El, Lambic, and sometimes bitter.
Saz hops have many descendants and are widely grown all over the world, but other regions of Saz have always lagged behind their Czech origins.
